Raspberry frangipani cake

This is a Thermomix version of a couple of recipes pulled out of magazines or library books - I think it is pretty well perfect. Deliciously perfect anyway

Place 200 g white sugar and the rind of 2 lemons in the Thermomix grind 5 seconds at speed 10. I take the rind off using a vegetable peeler.



Add 200 g unsalted butter (I use the groovy Western Star 100g portions) cut into cubes
Blend 30 seconds at speed 5
Add 4 eggs one at a time blend 5 seconds at speed 5 after each egg is added

Scrape down the sides, add 200 g almond meal and 30 g cornflour blend 20 seconds speed 5
Scrape down the sides again and blend 20 secs at speed 5

Pour into a wide shallow dish - I use the Chef's Toolbox pie mold which sadly appears to be discontinued - the slice tin would do the trick...

Then decorate the top with sixteen raspberries - I just use frozen ones



And bake at 175 for about 25-30 minutes till just starting to brown around the edges

Turn out and leave to cool - I turned it out by using two plates and flipping it quickly.


This is great with yoghurt cream...
To make yoghurt cream just whip cream and then fold through an equal quantity of yoghurt

last night we had it with Weight Watchers Raspberry Dessert Sauce which is seriously yum! Serves 12
9 ProPoints per serve and worth every mouthful!

Weight Watchers Tuna and White Bean salad

Tonight we tried a tweak on this recipe

Variations? Of course - I don't think I am capable of following a recipe to the letter.

I spread a bed of mixed spinach and rocket leaves on a large platter - some salads just look fabulous on a plate rather than in a bowl

Because there were only two of us and we were keeping one serve for lunch tomorrow I reduced the tuna - I used one 85g can and one 185g can. I also didn't measure the lemon juice - just squeezed in a whole nice juicy one I had nearby.

Dill and parsley from the garden - put them on the plate after the beans - the flavour spreads through so much better - next time I will chop the dill even though this recipe said tear it.

Only 6 Weight Watchers Pro Points in less than 10 minutes - how good is that?

Pretty isn't it?


PS Weight Watchers says it is in one of their books - can anyone tell me which one? I can link to the book then too. I have not managed to locate it in any of the seven Pro Points books I have here.

Balsamic salad dressing

Put 1 clove garlic in in the thermomix and chop at speed 7 for 3 seconds

Insert butterfly

Add:

Freshly ground pepper
Salt 
3/4 cup olive oil
1/4 cup lemon juice
2 tablespoons balsamic vinegar

Blend at speed 4 for 1 minute

pour over leafy greens and enjoy!

Simplicity

I received a kind gift of some lovely backyard free range eggs this week, so have put them aside to use in special dishes.
Tonight lots of people had to be places so we needed quick.
Menu for wo people:
3 bunches asparagus
4 eggs
1 lemon
fresh ground salt and pepper

Steam asparagus. Poach eggs. Squeeze lemon over asparagus. Eat and enjoy. 4 ProPoints per serve - easy as!

Lemon tuna salad

This is a variation on a salade nicoise I have made a few times. That recipe has a LOT of oil in it. And is for four people. So I mixed it up a bit and reduced the quantities - 3 serves for us.
Start with lovely fresh greens - tonight I used ready washed spinach and rocket, cherry tomatoes and red onion sliced real thin
Add some zing - 60 g pitted kalamata olives
Add some stuff to fill you up - a can of white beans and two eggs I hardboiled earlier in the Thermomix
Now to make the dressing - I put some thyme from the garden in the TM with a clove of garlic
Whizz 2 seconds at speed 7
Scrape down and add the following: 
Juice of one lemon
1/4 teaspoon raw sugar
2 teaspoons dijon mustard
ground salt and pepper
And the secret ingredient this amazing lemon infused olive oil
whizz 5 seconds at speed 6
Arrange drained tuna steaks (springwater) on the top of the salad and give the tin to the ninja cat to enjoy. Then pour over the dressing and serve! This is so filling neither of us had bread with it tonight. It will stretch to 4 or 5 serves just add more eggs and tuna or have crusty bread with it
three serves at 11 Pro Points each

Psychedelic salmon






We tried the Weight watchers Food You'll Love cookbook
lemon and maple salmon last night but didn't fancy their sides.

So we went with the tried and true Jane Kennedy no boombah asparagus and tomatoes (for details see here) and planned cauliflower mock rice again because it is so easy and yum and totally free of Weight Watchers ProPoints.







When we got to the stupid market they had a treat in store for us - three colours of cauliflower to choose from! So I brought home purple and this is what it looked like when it had been knocked apart in the Thermomix!








Then I mixed up the marinade - lemon rind and juice and maple syrup (real maple syrup not pretend) 
Mix and pour over salmon 15 minutes before putting it in the oven




The marinade was really quick and simple so with the cauliflower steaming away and the salmon and asparagus in the oven there was really nothing to do but sit down with a glass of wine!

The final result - delicious!
